The aim of the current study was to investigate the effect of variation of time process and steam flow rate in the yield on ginger essential oil steam distillation extraction process. It was found that the best operation condition was 0.35 ml/s as the steam flow rate which yields 2.43% oil. The optimum time process was predicted at 7.5 hours.
